The Deatsville Distinction
When our team saw this barrel was pulled from Deatsville, we knew we were in for something special. Located about ten miles from the main Heaven Hill campus, the Deatsville site is home to some of the most sought-after rickhouses in Kentucky.
Unlike modern concrete warehouses, these are traditional wood-clad structures sitting on a high ridge. The combination of the wooden construction and the specific airflow on the ridge allows for more dramatic temperature swings. This “breathing” process forces the whiskey deeper into the charred oak, resulting in the rich, buttery texture and deep caramel notes that have made Deatsville barrels a favorite among enthusiasts.
Tasting Notes
Nose:
Burnt butter and toasted brown sugar lead the way, followed by cola sweetness, Bing cherries, and ripe pear. Cinnamon adds warmth while a light touch of ethanol reminds you of the proof without overpowering the aroma. A subtle nuttiness lingers in the background, encouraging a deeper nosing.
Palate:
Buttery and smooth with a pleasing viscosity. Notes of leather and light tobacco provide structure alongside oak essence. Cinnamon bread and allspice emerge mid-palate, balanced by caramel richness and a gentle kiss of vanilla.
Finish:
Long and satisfying with surprisingly restrained heat for the proof. Initial sweetness transitions into light baking spices and expressive barrel notes. Caramel and dark plum linger, leaving a warm, mouth-watering finish.
The Verdict
This barrel stood out for its incredible balance. While the proof is high at 126.6, the heat is beautifully integrated, allowing the classic Deatsville profile of dark fruit and toasted sugar to shine. It is a “big” whiskey that remains approachable and decadently smooth.
