Decoding the Craft: A Technical Journey with Maker’s Mark

Our March 11th meeting offered a departure from the traditional sit-down tasting as we welcomed Lanessa Jones representing Maker’s Mark for a high-energy, technical exploration of bourbon chemistry. Organised into five rotating stations, the evening moved beyond marketing stories to engage with the actual “why” behind the flavors in the glass. By using Maker’s Mark Cask Strength as a consistent control point throughout the night, members were able to see firsthand how specific variables like water, wood, and temperature fundamentally alter the base spirit.

The presentation focused heavily on the mechanics of flavor, using tactile demonstrations to explain complex distillery processes.

We explored the science of “extraction” and “oxidation,” learning how Maker’s controls these factors in a limestone cellar at a constant 50 degrees Fahrenheit to prevent the whiskey from becoming over-oaked or bitter.

Beyond the warehouse science, the session challenged our palates with interactive sensory testing designed to debunk common myths. At various stations, members ranked diluted sugar and lemon solutions to understand how acidity and sweetness impact perception, and even sampled rye versus wheat bread to identify the “soft” profile of the Maker’s mash bill. Lanessa even utilized a “Scrub Mommy” sponge to visualize how whiskey interacts with a barrel, explaining that the char layer acts as a filter to remove harshness, while the toast layer provides the essential color and sweetness.

This educational approach culminated in a tasting of the distillery’s Wood Finishing Series, including a rare, unreleased pour of the Steward’s Release.

The event concluded with a look at the significant growth of the Maker’s Mark Ambassador program, noting that Ohio now hosts the second-largest ambassador group in the country. Lanessa shared the incredible demand for these local experiences, mentioning a recent event that reached its 250-person capacity in just 15 minutes.

With a record-breaking turnout for a distillers meeting, it was a night that balanced scientific rigor with community spirit, leaving everyone with a more refined palate and a deeper respect for the meticulous work happening in Loretto.
